Wacky Wednesday

I'm sure everyone has been missing me!  Sorry for the extended leave here.

This week Paige has been going to Vacation Bible School in Polk City for 2 hours and oh boy do I love those 2 hours.  I make a LONG list of "to-do" items but normally don't get too far because I will start watching the Olympics.  However, I have been busy doing laundry and getting the house back into shape since being back from the lake.

Here is one of Paige's creations that she made this week at Bible School.  She absolutely loves it and gets super excited when we get home so she can tell me all about it.  She has a hard time of remembering what they do (she always says I don't know) but she tries hard to show me the dance moves they learn to songs and what snacks they eat!



Before I forget, I made an AWESOME steak meal last night.  Kudos to Abby for providing me the recipe.  Get this..............  My dad even raved about it!  THAT'S NOT IT FROM RON....he even said the steak was so delicious that he didn't need steak sauce.  I about fell over.  I have NEVER heard or seen my dad eat meat without some sort of sauce.  I asked him if he was "low on sugar" and he said no!

Here is the recipe-

4 garlic cloves minced
1 jalapeno minced (original recipe calls for 2)
handful chopped cilantro
juice of 2 limes
juice of 1 orange
2 T white vinegar (I had to use apple cider vinegar since I was out of white)
1/2 cup olive oil
salt and pepper to taste


MIX THOSE ITEMS TOGETHER IN A BOWL AND POUR OVER THE STEAK (Flank Steak)


I marinated the meat overnight so it was ready to throw on the grill right when I got home from work so I didn't have to wait long for dinner. Remember when you're grilling flank steak to cook it Medium Rare or it gets really tough. This should mean about 5-7 minutes on each side on the grill. Also be sure to let it rest for at least 5 minutes before slicing so you don't lose all your lovely juices!

I just warmed the tortillas up in the microwave for 20 seconds, and put a mix of authentic Mexican cheese (the blend I got was queso quesadilla, asadero, and manchengo), and threw some Mad Butchers Salsa, sour cream on it.  I'm sure I could had done without the salsa and sour cream but it was still good.  Abby's original recipe calls for pico on the tacos, but are you kidding....I'm too picky!



THIS IS A MUST TRY DINNER!  When I went to get the steak, I had no clue what I was getting.  Just ask the meat guy and they will tell ya!

Paige has been able to fall asleep all 4 years in the boat, just like this position.  Ever since she was 5 months old, she falls asleep instantly once the motor starts running.  I'm not sure why but it can be nice at times!

I was SO SO SO impressed with Paige on vacation.  She started to jump off the boat AND the dock.  I'm pretty excited about the picture below because I caught her in action (something a pro photographer would do!!)








Overall, we had a great vacation!
